Dripping Springs has earned its reputation as the "Wedding Capital of Texas," but for those in the know, it is arguably the most exciting craft beer destination in the Southwest. This isn't just about grabbing a cold one. It's about "terroir," innovation, and stories that stretch back thousands of years.
Just a short drive from Woodline Ranch, you'll find world-class fermentation projects, husband-and-wife passion projects, and breweries that have grown from class projects into national powerhouses.
Here is our curated guide to the history and flavors of our neighbors.
Breweries & Pubs
13187 Fitzhugh Rd, Austin, TX 78736 (9.1 miles)
Jester King is not just a brewery; it is a pilgrimage site for beer lovers worldwide. Founded in 2010 by brothers Jeffrey and Michael Stuffings, it was established on a beautiful 165-acre ranch with a singular mission: to create "authentic farmhouse ales" tied to the land.
What makes Jester King unique is their commitment to spontaneous fermentation. They use a traditional copper "coolship," a broad, shallow vessel, to cool their wort overnight, allowing it to be inoculated by the native wild yeast and bacteria blowing in the Texas Hill Country wind. This captures a true sense of place, or terroir, in every bottle.
Did you know? The name "Jester King" is a nod to the character of the Fool in Shakespeare's King Lear, who was the only one who could speak the truth to power without losing his head. It symbolizes their philosophy of challenging the status quo of industrial beer.
4700 W Fitzhugh Rd, Dripping Springs, TX 78620 (12.2 miles)
Founded by Joe Hogge and Aaron Luelling, 12 Fox is a brewery born from service and a love for European tradition. The two met in the mid-90s while serving as combat engineers, MOS "12 Foxtrot," in the U.S. Army.
Stationed in Bamberg, Germany, they developed a deep appreciation for authentic German biers. They brought that passion back to the Hill Country, creating a kid-friendly, dog-friendly biergarten that specializes in high-quality, small-batch European style ales and lagers. It's where precise German brewing meets relaxed Texas hospitality.
3700 Bell Springs Rd, Dripping Springs, TX 78620 (7.6 miles)
Located just down the road from Woodline Ranch, Bell Springs is our friendly neighbor. While less experimental than Jester King, it offers exactly what you want on a sunny Saturday: solid, accessible brews in a laid-back, unpretentious setting. It's the perfect first stop on your way into town.
23455 Ranch to Market Rd 150, Dripping Springs, TX 78620 (11.4 miles)
Twisted X began with a bold new category: "Tex-Mex Beer." Founders Jim Sampson and Shane Bordeau started testing recipes on a 10-gallon pilot system in 2009, dreaming of beers that paired perfectly with the spicy flavors of Texas cuisine.
Their breakthrough came with the Fuego, a jalapeƱo pilsner that proved craft beer could respect Mexican brewing traditions while adding a Texas kick. Today, they operate out of a modern facility in Dripping Springs, but that spirit of border-crossing innovation remains in favorites like their McConauhaze IPA.
23663 Ranch Rd 12 @ Ghost Note Ln, Dripping Springs, TX 78620 (14.4 miles)
Opened in 2022 by husband-and-wife team Kenny and Thelma Coleman, Ghost Note takes its name from a musical term: a note that is felt more than it is heard. This philosophy guides their "porch beer" approach, with brews that are subtle, approachable, and designed to accompany good conversation and live music rather than overpower them.
The brewery sits on what was formerly a wedding venue, which explains the beautiful, mature oaks and relaxed, garden-party atmosphere. It feels less like a production facility and more like hanging out in a friend's very nice backyard.
15435 Fitzhugh Rd, Dripping Springs, TX 78620 (9.5 miles)
Opened in 2020 by the daughter-father team of Kerbey and Dubb Smith, Fitzhugh Brewing was built from the ground up on family-owned land. Kerbey's vision was to create an inclusive space where excellent beer and food are accessible to everyone, not just craft beer aficionados.
Head brewer Nathan Rice is the secret weapon. He specializes in "forgotten beers," historic styles from around the world that have fallen out of fashion. Think pre-Prohibition American lagers, obscure German styles, and British session bitters. Each recipe is researched, reinterpreted, and given a Texas Hill Country twist. It's a brewery for the curious.
211 West Mercer St, Dripping Springs, TX 78620 (9.8 miles)
Tucked into the historic heart of downtown Dripping Springs, Acopon is a love letter to the English pub tradition. Founded by Dave Niemeyer and John McIntosh, the brewery was inspired by McIntosh's formative experience drinking cask ale as a student in England.
Acopon follows an old-world model: every town should have its own local brewery. They source hops, yeast, and grains directly from the UK to create authentic bitters and milds, served on cask from a traditional hand pump. It's a rare experience on this side of the Atlantic, the kind of quiet, unpretentious spot where you settle in for a pint and a conversation.
13551 Ranch to Market Rd 150, Driftwood, TX 78619 (18.7 miles)
Vista Brewing represents the modern evolution of the destination brewery. It successfully integrates a farm-to-table restaurant, an apiary (bee farm), and a farm with a world-class brewing operation. The architecture is stunning: modern limestone and wood that frames the ancient live oaks of Driftwood. It is civilized, elegant, and deeply connected to its environment.
Whether you go for the spontaneous fermentation of Jester King or the authentic German lagers of 12 Fox, you're tasting the history of the Hill Country. Cheers!
